I'm heading off on an extended trip of at least 6 months through the Philippines, Thailand, and Vietnam.
I currently have an iPhone on AT&T.
I want to avoid roaming charges and so on.
What's the best carrier to port my number to, and the best local eSIM?

Get an eSIM in whichever country you're in. It's cheaper than roaming

I switched to Verizon and upgraded to their better plan. It includes free calls and texts in 120 countries. I've been using it here in the Philippines and other Asian countries for 18 months.
