Looks like this diagram recommends peeling off the stickers (which is how most people solve a Rubik's cube anyway)
Decent ones don't have stickers.. but you can take it apart, and just getting it back together is a whole other challenge
Prying the pieces out with a flathead screwdriver and reassembling it is the better option. The problem with peeling the stickers off and putting them back is that they don't stick as well. Eventually they start sliding around or just fall off.
I mean, the best option is to use an online solver if you don't want to learn to solve it yourself.
Step 1: Rotate the sides Step 2: ???? Step 3: Profit

I think it's great that your 8-year-old is curious about abstract things like this, and getting the hang of drawing 3D shapes.
