Pampanga food

We spend a fair amount of time in Pampanga… and keep exploring the local Kapampangan food.

I came across this graphic… apparently these are Pampanga's signature dishes (feel free to add stuffed frog if you like).

Sisig, of course….
I didn't know tamales had a connection to Mexico/Spain.
Kare-kare is an underrated and unique dish.
I've had bringhe… but didn't know the name.
Tibok-tibok…. 'beating heart.' If you know, you know (IYKYK)

It amuses me how hard they insist on being different from Spain and the rest of Spanish-speaking America, when their traditional dishes turn out to be literally the same food eaten in Spain or the Americas, often with the exact same Spanish name
