Hearty soup for days when you have no appetite or energy
This is my own Bak kut teh with a slight Japanese/Korean twist!
I use about 800g of pork ribs. First, soak the ribs in cold water with a bit of sake, then pour off the water and rinse them.
Put the ribs in a pot, add fresh water, the bak kut teh spice packet, lots of garlic, onion, and cheongyang chili (spicy Korean green chili). Simmer gently over low heat for about four hours, adding more hot water as needed.
Season with kombu soy sauce from Mitsukoshi and white pepper. Add the potatoes 20 to 30 minutes before the end, and add the green onions just before it's done.
The broth gets richer the longer it cooks, so taste and adjust the seasoning at the end. Enjoy with steamed rice!
Enjoy! 🍲
I used to eat bak kut teh a lot when I was buying it in Kuala Lumpur… it's the herbal taste that's good for you.
Speaking of soup... I got dengue fever last year, and for a week I completely lost my appetite. I really wanted soup and needed it. But all the soups they sold were just thin broth with a single chunk of meat in it. I asked if anyone knew thick tomato soup, and nobody did. It was the strangest experience I've had in the two years I've lived here. In the end I got it made to order, but I went through a bit more hardship than I needed to back then.
I'm going to Singapore and Malaysia in a few weeks, so I'll see if I can find this at hawker centres. It looks delicious.
Some people deliberately pick a miserable meal, huh.
