One thing that's great about Conan is that he only cares about whether the bit is funny. If it helps the bit, he's happy to play the straight man and let someone else be the star.
Totally true. He mostly does self-deprecating humor, and he'd rather be the butt of the joke than the one telling it. From what I've personally seen, he's also one of the nicest people you'll ever meet.

I saw in another post that he runs a bar in Brooklyn. So he's not a comedian, but I guess bartending is a kind of improv practice.

No, he's just a regular guy. But he runs a bar and made a cocktail after Conan. There's an interview about it too. The cocktail's called Baby Daddy Conan.
