My Balikbayan privilege period is about to end, and I'm thinking of making a day trip to Taiwan or Hong Kong with my wife to extend it for another year. What I'd like to know is... what does my Filipina wife need to do or have in order to leave the Philippines without any problems?

Yes, to get the Balikbayan visa, your wife always has to be with you each time you enter the Philippines. If you enter without your wife, you can't get the Balikbayan visa.
Hong Kong is cheaper.
Go early. If your wife's passport has no stamps at all, they'll grill you about your relationship. Make sure you have photos on your phone! They'll say you need special medical insurance, but you don't! You just have to agree to pay for any medical costs you need abroad!
